With a monolithic, jet-black exterior, Jackalope's contemporary design stands in sharp contrast to the surrounding countryside, this juxtaposition a nod to the hotel's namesake, a mythical creature — part-jackrabbit, part-antelope — that exists only in folklore.

Shared spaces are lavished with inhabitable art, while the hotel's 44 rooms are a restrained statement of whites and greys; floor-to-ceiling windows and private terraces offering sweeping views over the infinity pool and vines.

Two hatted restaurants (Australia's Michelin Star equivalent) delight with contrasting takes on farm-to-fork food: Doot Doot Doot delivers occasional dining and a tantalising tasting menu; while winery restaurant, Rare Hare, serves up a food and wine affair with a casual air.

Rooms

Forty-four rooms and suites showcase contemporary design, entwined in perfect harmony with their country. Floor-to-ceiling windows and private terraces are brushed with intoxicating vineyard views, while interiors are lavished with custom-made furnishings by Zuster, perfectly crafted to complement the space and deliver unconstrained comfort. Select rooms have a deep-soak, black stone Japanese bath (with separate rain shower), while others are equipped with an extended lounge and deluxe double shower.

Only one hour by car from Melbourne, the Mornington Peninsula offers some of Australia’s best food and wine, beach and leisure activities — making it the perfect addition to a Melbourne visit.

Cellar doors, restaurants, farm gates and galleries dot the rolling hills around Jackalope’s own vineyard, while the Peninsula’s unique array of dramatic surf and sheltered bay beaches contribute to the perfect mix of coastal and country reverie.

Food and drink

Jackalope’s hatted dining room Doot Doot Doot exudes respect for the feast, effortlessly offered with disrespect for the familiar. Australia’s finest produce, plated with fresh goods from the kitchen garden, champions a menu intrinsically linked to the land.

Winery restaurant, Rare Hare, delights with indoor and outdoor dining overlooking the vine-laced hills and wood-fired fare foraged from neighbouring farms.

The hotel’s cocktail bar Flaggerdoot is an infusion of forms; classic herringbone floors contrast with edgy installations and a one-off electric blue pool table, creating a sense of curated-cool.
